I <3 Dashi


The episode we're shooting right now takes place in the desert, so our shooting crew is on location in Joshua Tree for the week. With the company being so far away, work was a little slow, which meant we got to venture out of our little Culver City bubble for lunch. Friday we ordered in from Mishima where I got this big bowl of Steamed Japanese Mountain Veggies and Soba Noodles in Dashi broth.

I am totally baffled by how few restaurants use Dashi. It's this soup made with kelp and shitake mushrooms that rocks my face off everytime. Fred 62 makes a killer noodle bowl with it, but does anyone know where else they serve it? It's completely vegan and very flavorful so you'd think it would be on more menus. Whatevs, I'll just keep going back to Mishima!

Dashi is not typically vegan, so do take care to ask how they make it. It is usually made from kelp and bonito fish flakes, though one made from a shiitake base sounds delicious.

thanks for that info Otana! the two places I've had dashi did use the vegan kind with kelp and shitakes, but now i know to be cautious in the future.

FYI: I was looking on Leaf Cuisine's website, and they make a Wakame Wonder Wrap with wakame seaweed. http://leafcuisine.com

Unfortunately, even the lure of a seaweed wrap is not enough to get me to eat at Leaf. I've eaten there twice and both times I literally threw my food out after a couple bites because it was awful. (I had the carrot miso soup--which tasted like water--and the garden delight wrap, and the veggie sunburger wrap).

Have you had anything good there?
